Ingredients:
- 1 pound of sausage or ground turkey
- 4 cups chicken broth
- 1 can diced tomatoes
- 2tbsp tomato paste
- 1tsp oregano
- 1/2tsp parsley
- 8 lasagna noodles, brocken in 2 inch long pieces
- 3 ounces baby spinach (optional)
- 1/4 cup heavy cream
- 8 ounces ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/3 cup parmesan cheese
Directions:
- In large sauce pan over medium heat cook sausage or ground turkey until browned, drain fat
- Add chicken broth, diced tomatoes, tomato paste, oregano and parsley
- Bring to a boil, then reduce heat, cover simmering 20 minutes
- Meanwhile, cook lasagne noodles according to that directions, normally boiling 8 minutes
- Combine cooked pasta, spinach and heavy cream to soup mixture, combine and remove from heat
- In medium bowl combine ricotta, mozzarella cheese and parmesan cheese
- Serve soup in bowls and top with 1 scoop of cheese mixture
