Organize Your Kitchen for Weight Loss

-Make It Easy to eat Healthy Foods when in a time crunch like nuts, pre-cut veggies, fruit, and Greek yogurt easy to grab when you’re hungry.

-GET RID  OF THE JUNK! Ok I know its not always ok in some houses. My husband used to hate not having ice cream around. You will just need to hide the Junk Food. If you must keep treats in the house, stash them where you don’t see them all the time. Chocolate chip cookies can go in the freezer, you can make Shakeology ice cream, and make unhealthy foods go on a hard-to-reach shelves.

I have a small kitchen compared to most because I'm a full timer RVer but that cabinet above my refrigerator is always my go to place for what i consider junk food. My husband likes chips with his lunch and yes their a healthier chip but I still don't want them.
I hope these little tips will help you feel more confident.

Paleo Approved Coconut Crusted Chicken

Ingredients
  • 2 boneless, skinless chicken breasts
  • 1/2 cup coconut flour
  • 2 eggs
  • A splash of full-fat coconut milk or even almond milk
  • 1 cup shredded coconut

  1. Preheat your oven to 400 F.
  2. Using a heavy object, like a rolling pin, hammer the chicken breasts so that they flatten to an even thickness.
  3. Cut the chicken into long strips that are about 1″ in width.
  4. You will need three bowls; one for the coconut flour, one for the coconut milk and egg mixture (just beat the eggs and milk together) and one for the shredded coconut.
  5. Coat each chicken strip in the coconut flour, then soak in the egg and coconut milk mixture and finally coat in the shredded coconut. When finished, place the chicken strips on a large baking sheet, leaving some space between each strip and cook for 10 to 12 minutes, or until chicken has completely cooked through. I did  minutes one side and flipped over for another  minutes because of my oven.
  6. Serve with some paleo ketchup or a healthy dipping sauce and enjoy!

New Home New Excuses

Its been a crazy couple of weeks.
My husband, two kids and I decided to become full time RVers! We are so excited for our new life style.

Like all changes come difficulty and challenges that used to turn into excuses in my past. I don't enjoy change as most don't and I used to find excuses to stop doing things like working out. I have definitely changed in the last 2 years on the inside and out. I haven't missed one workout even though my space is smaller then most dinning room tables. Today is week 3 of living in our RV full time..... First meal cooked in our new home was chicken of course lol
