First off this is not my photo! The recipe was awesome and my entire family enjoyed it but the picture just didnt do it justice.
It did do its job by being quick and filling.
Is it the healthiest recipe out there? No
But you could do way worse.
Ingredients:
Tortilla chips
Mexican cheese
1 pound ground turkey
1 can diced tomatos
Individual container Greek yogurt
3/4 cup water
Directions:
Preheat oven at 350 degrees
Brown turkey in a medium sauce pan and drain
Add drained diced tomatos, taco seasoning, Greek yogurt and water
Heat 5-10 minutes
Take a casserole pan and spray it with coconut oil then spread a layer of tortilla chips covering the bottom of the pan.
Layer meat, cheese then chips till gone with the last being cheese
Cook at 350 degrees for 20 minutes or until cheese bubbles
Enjoy this quick dinner
