Kids Approved Vanilla Birthday Cake/Cupcakes With Chocolate Frosting


I was honored to be allowed to make my daughters birthday cupcakes to bring to her homeschooling enrichment class. 
As many parents know children have allergies so they don't allow hand made baked treats or they have the kids with allergies bring their own treats.
The school allowed me to share this healthy version of vanilla cupcakes topped with chocolate frosting and every kiddo of about 18 loved them! 

This recipe is made with healthy ingredients and I recommend trying this with no worry that kids won't like it. Just don't tell them its healthy.....

Ingredients:

Cooking spray

1 cup almond flour

1/2 cup coconut flour

2tsp baking powder gluten free

1/4tsp sea salt

3/4 cup kerrygold grass-fed butter/unsalted butter this will be divided between the cake and frosting

1 cup raw honey or I personally use maple syrup, this will be divided between the cake and frosting

4 organic fed eggs

1/3 cups +3 tbsp unsweetened almond milk, this will be divided between the cake and frosting

1tsp pure vanilla extract

2/3 cup organic unsweetened cocoa powder

Directions:

Preheat oven to 350 degrees

Coat baking pan with spray, either a round cake pan OR cupcake pan and set aside

Combine both flours, baking powder and sea salt, set aside

In a separate bowl cream together 1/2 cup butter and 3/4 cup honey beating for 1 minute OR stir VERY well till its combined evenly

Add eggs one at a time until blended

Add 1/4 cup of almond milk and vanilla extract then beat until blended

Add the flour mixture to the butter mixture and beat until creamy

Pour batter into prepared pan

Bake 25-30 minutes or until a toothpick or knife comes out clean, place on cooling rack

Frosting Directions:

Whip remaining 1/4 cup butter in a bowl; beat on medium for 1-2 minutes or stir until creamy

Add remaining 3 tbsp almond milk and beat until well-blended

Add cocoa powder and blended throughly scrapping bowl occasionally

Slowly add remaining 1/4 cup honey or maple syrup while beating on medium speed or stir till combined evenly, set aside

Frost cake ONCE COOLED and cut into 12 slices OR you will have over 12 cupcakes
