
Paleo Mayo
This is a super easy way of making mayo.
All you need is:
1 egg
2 tbsp. lemon juice
1/4 cup plus 1 cup of light olive oil (not virgin)
The appliance needed is:
A blender/food processor
The first step is to combine the Lemon Juice and Egg and let it get to room temperature. This normally takes 30 minutes to 2 hours.
Next place the egg and juice in the blender or processor and add ¼ cup of oil and blend.
The most time consuming part is after everything is blended. Slowly, like drizzle the 1 cup of oil in the mixture. This will take 3-5 minutes to compete so be ready. Then blend.
You now have Paleo Mayo that will thicken as it sits in the refrigerator. Mine normally takes a couple days to completely thicken.
