Brown rice tortilla, tomato sauce made with fresh tomatoes not canned. (Yes we go through it that fast that we can make a bulk amount for the week and would be a green container on the 21 day fix) Mozzarella cheese and spinach (promise you can't taste it) You can also add chicken if you need more protein that day.

Tomato Basil Soup


This healthy Tomato basil soup is delicious! 
This is not only a great soup as a side or meal but can also be put on your favorite pasta or spaghetti squash. Who needs soup in a can, this takes 5 minutes.

Ingredients: 

3 cups Homemade tomato sauce or low sugar tomato sauce

1 cup low sodium organic vegetable broth

1/2 cup plain greek yogurt

4 tsp shredded parmesan cheese (optional)

4 tbsp fresh basil leaves

Directions:

-Combine tomato sauce and broth in large saucepan; mixing well and cook at medium heat till gentle boil mixing frequently. 

-Reduce heat to low and add yogurt mixing well. Heat through for about a minute and add basil.

-Serve in a soup bowl and add a tsp of cheese to each serving

Baked Zucchini

Finally had a zucchini that wasn't fried! 
Ok if you grew up in a house like mine you would understand. My parents liked fried food. They took things like a fresh veggie from their garden and placed it in a deep fryer. 
I never even had fish unless it was fried.
Since becoming a mom of two I really looked at what I ate and realized this is not what i want my kids to eat. So this is very exciting for me that I made a zucchini that tastes great without frying it and covering it in salt. 
I hope you enjoy this 21 Day Fix approved, quick and affordable recipe as much as we have.

Ingredients:

1/2 cup grated parmesan cheese

2tbsp grated lemon peel (optional)

1/2tsp thyme leaves (option)

1/2 cup oregano leaves

1/2tsp sea salt

1/2tsp pepper (optional)

2 cloves of garlic chopped fine

4 large zucchini sliced lengthwise

1tbsp olive oil

Directions:

Preheat oven to 350 degrees

Combine cheese, lemon peel, thyme, oregano, salt pepper and garlic in a small bowl. Set aside

Place zucchini skin down on large baking sheet. Brush with oil, covering all of zucchini. Sprinkle evenly with cheese mixture 

Bake for 15-20 minutes, or until tender.

This blog is pretty emotional for me to write.
Ive been friends with Jeni for years but really became connected when she joined one of my groups on facebook a year ago. She wanted a change but didnt know where to start.

She decided to go to the doctor and get a health exam which gave her motivation.
Jeni said from day one her why for wanting to be healthy was for her kids.
After digging deep into grocery shopping and what to look for she jumped out of her comfort zone which isnt easy for anyone and started posting everyday in our facebook group. 

She is a busy wife and mom of 2 kiddos and is such an inspiration. Not only does she enjoy working out now but her kids get to watch her mommy kick butt and they want to be just like her.
Her husband is extremely proud of how far she has come!

Today she is completely different on the inside and out. I honestly was speechless when she posted this picture. 


Thank you Jeni for opening up to me and your new friends. We are so proud of how far you have come and know now that you can accomplish ANYTHING you put your mind to.

What Does Success Look Like to You?

Some of you might not know but two years ago I was overweight and overwhelmed even though I was a stay-at-home mom.
If you're a parent you would know what I'm talking about when the never ending to do list is always in front of you.
The last year I've been driving a lot more so I've been listening to personal development and it really hit me when one of the authors said she was super overwhelmed always had things on her plate when the kids went to bed she didn't stop and I completely related to that.
One of the things she said to do was really look at your life and see what success means to you. Not to somebody else, not to your neighbor, not to your friends but actually to you? If you didn't take anyone's opinion and you just looked at what you really wanted out of your life what would it be.
It took a long time and I wasn't able to really answered on the spot because I had no clue. The last several months I really took money worries off my plate and wrote down a to do list every day to see what really was happening every day in my life and that's when it clicked.
I spent more time cooking, cleaning and yard work of a big house then I did doing the things that I really enjoyed.
So that's when we decided as a family that we are going to downsize from a 2000 square-foot three bedroom two bath family room house with yard to a 3 bedroom two bath apartment.
I still feel overwhelmed like why do I need all the space all I have is a six-year-old and a two-year-old. My kids are so awesome they are very content with what they have.
Shortly after we moved into the apartments my husband got a new job at an RV dealership. This was definitely God because we kept thinking it would be so cool to travel I mean we don't like to stay in one spot all the time but no one we knew had ever lived in an RV before. And honestly a lot people just don't understand it because it's not the normal thing to do. Most feel like the American dream is to live in a big house and work the 8 to 5 job.
But tell me how many people who work the 8 to 5 job went to College make all this money can truly say that they love their life every single day.
So we decided to become full-time RVers and live what we consider the American dream.
This past weekend marks three weeks of living in an RV and yes there are ups and downs just like owning a new home for the first time but it is worth it.

So what would you consider success and what is your own American dream?

New Home New Excuses

Its been a crazy couple of weeks. 
 My husband, two kids and I decided to become full time RVers! We are so excited for our new life style. 

Like all changes come difficulty and challenges that used to turn into excuses in my past. I don't enjoy change as most don't and I used to find excuses to stop doing things like working out. I have definitely changed in the last 2 years on the inside and out. I haven't missed one workout even though my space is smaller then most dinning room tables. Today is week 3 of living in our RV full time..... First meal cooked in our new home was chicken of course lol

Life is so crazy on the RUN

I feel like everyday is nuts! Do you feel the same?

My name is Victoria, my husband and I have 2 kiddos ages 6 and 2, plus a german shepard.
I know doesnt sound to crazy
But im really cheap, like I dont like spending money if I dont have to.
So my husband (Eric) was transferred at his job to a place 20 miles from our apartment.
Not just 20 miles but in another state!
We live in Washington and drive to Idaho.
Im a stay at home mom but we have one car and like I said I dont like spending money so we will only have one car.
We made the decision that the kids and I will stay near Erics work to not just save money on gas and car maintenance but so the kids and I dont have to drive 2 hours 5-6 days a week.
YUP we are not the normal family.
Im here to share with you how we stay fit and healthy even on the rode all day while sharing tips we have learned.

Now you might ask what in the world do we do all day. Which actually on most days isnt bad.
During the summer we went to the parks most of the time.
Its now coming up on winter time though.
So we got a membership at a family gym so we can use the pool and game room.

Life is about to get a little crazier and I would love to share how we live out of the ordinary.

Homemade Almond Butter

Stop buying mayo (see my other blog)
and store bought almond butter when you can make your own.

Take almonds and roast them in the oven at 350 for 12 minutes.
Let cool
Blend in a food processor or vita mixer stopping to scrap down the side until the consistency is to your liking.

I am right where I want to be!


With most programs I'll say ok finish this 21 days and you can have a cheat meal. Not this time, I have no desire to fall off. I haven't felt this great ever. Not one bad food is worth over indulging in when you feel as great as I do.

My breakfast on day 4 was a banana and shakeology tropical strawberry, grapes for a snack, lunch was chicken salad, my other snack was cucumbers and hummus and my first dinner was spaghetti squash yum :)

Start back on track and feel satisfied and don't over eat.
Great program, great results and fast !

Day before the 3 Day Refresh



Im pretty excited to start a new nutrition program called the 3 Day Refresh. Paleo Mayo

This is a super easy way of making mayo. All you need is: 1 egg 2 tbsp. lemon juice 1/4 cup plus 1 cup of light olive oil (not virgin) The appliance needed is: A blender/food processor The first step is to combine the Lemon Juice and Egg and let it get to room temperature. This normally takes 30 minutes to 2 hours. Next place the egg and juice in the blender or processor and add ¼ cup of oil and blend. The most time consuming part is after everything is blended. Slowly, like drizzle the 1 cup of oil in the mixture. This will take 3-5 minutes to compete so be ready. Then blend. You now have Paleo Mayo that will thicken as it sits in the refrigerator. Mine normally takes a couple days to completely thicken. Husband and kid approved

She changed her life after 3 kids and a grandbaby! You can do it also

I met this amazing person named Sharon over a year ago.
She didn't know who I was but saw my fb posts and wanted me to coach her so she would look her best for her daughters wedding. Sharon is a wife, mom of 3 and grandma of 1.

Gym vs at home workouts

Let's face it our lives are always going a million miles a minute. We wake up and don't stop till we go to bed. We know we need to be active and eat better to live a longer more fulfilling life so what can we do to make that happen. Gym or workout at home? 

Going to a gym that's open 24 hours is best so no matter what your work schedule is it will be open. There's some great group classes so your not at it alone. If you don't feel confident working out in front of others these classes might not be what you are looking for. Some gyms offer a one day free session with a personal trainer. If you dont know how to use the equipment bring a note pad and ask as many questions as you can. If you don't use the machines properly you either will hurt yourself or not see any results at all. Example, no one told my grandfather to stretch and he ended up hurting himself. 

Purchasing a at home workout program normally includes everything you need. For example Beachbody programs come with the DVDs, schedule for 30, 60 or 90 days, a nutrition guide with a once a day health drink and a coach to help motivate, answer questions and help to make sure you finish your program with great success. The trainer on the DVD also tells and shows you exactly what to do so you don't get injured. When working out at home you will need to plan your day and stick to it. Not like gyms that give you their schedule when to go to a group class. At home you will need to make the schedule. When it's the best time to workout out, that you have the most energy and least amount of distractions. You can take that as good and bad since you can workout in your living room any time you want. If the program you purchase has a coach it's like having a accountability partner to keep you motivated. 

Gym or an at home workout program really depends on your goals and time you can dedicate meaning driving and spending an hour at the gym or working out in your living room for 25-55 minutes. 
Either way you need to schedule and make time to workout. Many workout programs at home do give you a schedule and with that you see results sooner then going to a gym.
