Beef Stew 21 Day Fix Container Approved

Ingredients:
1½ lb. raw lean beef stew meat, boneless
1½ medium onions, chopped OPTIONAL
2 medium tomatoes, chopped 
¼ cup reduced-sodium soy sauce/Braggs
1 Tbsp. hot pepper sauce (like Tabasco) OPTIONAL
½ to 1 cup low-sodium organic beef broth (or vegetable broth)
1 bay leaf OPTIONAL
½ medium green bell pepper, chopped
½ medium red bell pepper, chopped
2 medium carrots, sliced
2 medium potatoes I used sweet potatoes, cubed
3 cups cooked quinoa, hot OPTIONAL 
Preparation:
1. Place beef, onions, tomatoes, soy sauce, hot sauce, 1/2 cup broth, and bay leaf in large saucepot.
2. Bring to a boil over medium-high heat. Reduce heat to medium-low; cook, covered, for 40 minutes, adding additional broth as needed.
3. Add bell peppers, carrots, and potatoes; cook, covered, for an additional 15 to 20 minutes or until sauce has thickened and beef is fork tender.
4. Serve with quinoa, optional for those needing more calories 

Paleo Creamy Basil And Tomato Chicken


Ingredients:

1 pound chicken boneless breast

1 tsp coconut oil

3 garlic cloves

1 tbsp nutritional yeast

1 package of basil

1 tbsp coconut oil

Salt and pepper

1/2 cup coconut milk

1/2 tsp arrowroot powder

1/3 cup cold water

1 cup cherry tomatoes sliced

Directions:

-Heat the coconut oil in a large skillet over medium heat. Add chicken to the pan, cook for 12 minutes, then flip over and cook for 13 minutes. Chicken should be cooked through, if not cook until chicken has no pink in the middle and juice runs clear.

-Meanwhile, prepare the pesto: place garlic in the bowl of a food processor. Pulse until garlic is finely minced. Add the nutritional yeast, a sprinkle of salt and dash of pepper to the food processor.
Finally add the basil and 1 tbsp coconut oil, pulse until the basil is well minced.

-In a small bowl, whisk the arrowroot powder into the water. Add the coconut milk, and then whisk in the pesto.
Pour the sauce into the skillet with chicken. Bring to a gentle simmer. Add the sliced cherry tomatoes. Allow to simmer for 1-2 minutes until tomatoes are warmed then ENJOY

WOW that was a sweat fest workout!!!

I only had 30 minutes this morning and I still did a 22 minutes of cardio and 8 minutes of a core workout.
The days of working out for hours in the gym or even 50 min with at home workouts are long gone. 
I love that I'm apart of helping others get healthy and fit for life 

Turkey Chili

This is a family favorite for us. Not only is it quick and easy to make but you can make it a big batch by doubling the beans and have plenty of left overs or can be made for a football Sunday party.
Ingredients:
-1 pound lean ground turkey
-1/2cup diced tomatoes 
-8oz kernel corn, canned
-8oz black beans, canned
-8oz pinto beans, canned
-1tbsp tomato paste
-1 pkg chili seasoning 
-4oz shredded cheddar cheese

Directions:

Brown Turkey and drain fat

Place all ingredients except the cheese into a big pot.

Cook 10 minutes mixing occasionally then add cheese.

Enjoy


Banana Apple Muffins

Easy, healthy, delicious muffins approved by my kiddos and husband!
If your missing muffins but don't want to set yourself back then this is the recipe for you!


Ingredients:

2 eggs beaten

1 cup or 2 medium bananas

1 tbsp organic grass fed butter melted

1 1/2 cups almond flour

3/4 tsp baking soda gluten free

1 dash sea salt

1/2 cup or 3/4 of an apple chopped

Directions:

-Preheat oven to 350 degrees

-Prepare nine muffin cups by lining with muffins tin liners

-Combine eggs, banana, and butter in a medium bowl; mix well. set aside

-Combine almond meal mixture to egg mixture; mix until blended

-Add apple; mix until blended well

-Divide batter evenly between prepared muffin cups

-Bake 16-18 minutes or until golden brown

-Transfer to a rack to cool

Swiss Oatmeal

Do you not have a microwave at work, or are you always on the run during lunch and can't find anything that satisfying and healthy to eat? 
This is the recipe for you!

No microwave required, healthy and delicious.
This can be made for the week to just grab and go. 

Ingredients:

1/2 cup old fashion rolled oats, gluten free

3/4 cup unsweetened almond milk

3/4 cup plain greek yogurt

1/2 tsp vanilla extract

1/2 cup chopped strawberries 

1/4 of a medium banana chopped

12 raw almond (optional) 

Stevia to taste if the almond milk doesn't make it sweet enough

Directions: 

-Place oats, 1/2 cup almond milk, yogurt, extract, and cinnamon in a medium bowl; mix well

-Soak, covered, in the refrigerate overnight.

-In the morning, add remaining 1/4 cup almond milk; mix well

-Top with strawberries, bananas, and almonds before serving, this would also be when stevia can be sprinkled on.

Changing Bad Habits Is Hard

You might be feeling good even though you know you don't treat your body well then bam, out of nowhere your body says nope I'm DONE
Don't wait till that moment!
Sometimes it takes those moments to kick start treating our bodies better.
It could start by wanting to lose or even gain weight 

Or to start cutting back on things like less smoking or half your normal amount of junk or even starting a new habit like eating breakfast

I can tell you my secret:

I started one day at a time
If I couldn't stick with what I was doing a year from that moment then I found a different way
Changing bad habits is HARD so why do something you know now you can't stick with.

Baked Zucchini

Finally had a zucchini that wasn't fried! 
Ok if you grew up in a house like mine you would understand. My parents liked fried food. They took things like a fresh veggie from their garden and placed it in a deep fryer. 
I never even had fish unless it was fried.
Since becoming a mom of two I really looked at what I ate and realized this is not what i want my kids to eat. So this is very exciting for me that I made a zucchini that tastes great without frying it and covering it in salt. 
I hope you enjoy this 21 Day Fix approved, quick and affordable recipe as much as we have.

Ingredients:

1/2 cup grated parmesan cheese

2tbsp grated lemon peel (optional)

1/2tsp thyme leaves (option)

1/2 cup oregano leaves

1/2tsp sea salt

1/2tsp pepper (optional)

2 cloves of garlic chopped fine

4 large zucchini sliced lengthwise

1tbsp olive oil

Directions:

Preheat oven to 350 degrees

Combine cheese, lemon peel, thyme, oregano, salt pepper and garlic in a small bowl. Set aside

Place zucchini skin down on large baking sheet. Brush with oil, covering all of zucchini. Sprinkle evenly with cheese mixture 

Bake for 15-20 minutes, or until tender.

Cize, the End Of Boring Exercise

Who loves the idea of dancing instead of working out but just doesn't want to look like a fish in the fitness classes at the gym? 
I have to say I was just like that, I loved the idea of zumba but couldn't make it to the classes enough to get the moves down so I always looked like a fish out of water lol.

Summer Salad with Dressing Recipe

I went so long not wanting to eat salads because its known as a "diet" food that I forgot how healthy and delicious it is. Now most of us eat salads and pile on the high calories or fat dressing. 
Well today is your lucky day because below is a homemade 21 Day Fix approved dressing option!

My salad was on a 108 degree day and I added 2 green containers of organic lettuce, 1 red container of chicken, 1/2 a blue with organic cheese and my 21 Day Fix approved dressing in the orange container.

Dressing Ingredients:

-1 medium avocado cut into chunks
-1 1/2cups nonfat plain greek yogurt
-4tbsp chopped herbs like parsley
-3tbsp lemon juice
-1/4tsp sea salt
-1 dash pepper
-1/3cup extra virgin olive oil

Directions:

1- Pace avocado, yogurt, herbs, lemon juice, sea salt and pepper in a blender. Blend until smooth
2- Continue blending avocado mixture slowly adding oil until blended
3- Store leftovers in the refrigerator

4th Of July Popsicles Recipe

Kid approved 4th of July Treat. The hardest part is making them wait overnight.

Ingredients:

-Dixie cups or mini solo cups (you get smaller and more using the mini solo cups)

-Wooden popsicle sticks

-16oz fresh strawberries

-2tbsp of fresh lemon juice

-1-2 containers of greek yogurt 

-1 pint of blueberries

-1 scoop of Tropical Strawberry Shakeology or regular Strawberry Shakeology to make it a over the top healthy popsicle. (To try a sample pack of Shakeology click this link)

Directions:

1. Blend strawberries with 1 tbsp of lemon juice and Shakeology then add to each cup. Remember you will be adding 2 more layers so leave room. Freeze for 30 minutes.

2. Stir greek yogurt with a fork to loosen it up then add to each cup. Insert popsicle sticks in each cup and freeze another 30 minutes. 

3. Blend blueberries with 1tbsp lemon juice. Add to cups and freeze over night.

4. Take the cup off before serving and enjoy

Gluten Free Meatballs

So excited about this recipe, it can be made with bison, organic beef or ground turkey. Make sure that your steel cut oats are gluten free. Yes you can see the oats but can't taste them. Enjoy these for lunch matched with your favorite steamed veggie or dinner on some cooked spaghetti squash.

Ingredients:
cooking spray
1-2 pounds of ground turkey, bison or organic beef
paprika
3/4 cup steel cut oats
1 whole egg
2 tbsp tomato sauce (no sugar added)


Preheat the oven for 400 degrees, spray a non stick baking sheet with either coconut oil (for health benefits) or olive oil. Its easier to control and is zero calories.

In a medium size bowl combine meat of choice, paprika, steel cut oats and the egg.

Roll mixture into 1 inch meatballs and place on baking sheet. Spoon a small amount of tomato sauce over each meatball.

Bake in the oven for 20 minutes or until tits no longer pink (Do NOT over cook the turkey)

Enjoy


Superfood Packed Peanut Butter Cups

  • 2 tsp. unrefined coconut oil, melted
  • 2 Tbsp. powdered chocolate peanut butter (like PB2)
  • 2 tsp. Chocolate Vegan Shakeology YES you can use chocolate protein powder, its just not as healthy but defiantly better then a peanut butter cup
  • 2 Tbsp. water
1. Combine oil and powdered peanut butter in a small bowl; mix well. Set aside.

2. Combine Shakeology and water in a small bowl; mix until it has a pudding-like consistency. Set aside.


3. Coat two foil muffin liners evenly with half of peanut butter mixture. Top evenly with Shakeology mixture and remaining peanut butter mixture.


4. Freeze for 30 minutes, or until firm.

Healthy Omelet Breakfast

Such an easy breakfast for yourself and the kiddos that you can make for the week. 

Ingredients:

  • 6 Eggs 

  • Turkey Bacon Cured

  • 3/4 cup Unsweetened Almond Milk

  • 1tbsp Coconut Flour


Directions:

-Preheat the oven for 350 degrees

-Take out a medium size mixing bowl, frying pan and a muffin pan. 

-Combine all ingredients except the bacon and place in a non stick muffin pan

-Cook Turkey bacon, cool then break up bacon and place in each muffin cup

-Place the muffin pan in the oven for 20 minutes

Enjoy your quick breakfast for the week. 

Add your favorite veggies like spinach and peppers also.

Superbowl Turkey Dip

Ingredients:

  • 1 packet of Taco Seasoning
  • 1 pound Ground Turkey
  • 1 can of Black Beans
  • Your favorite cheese (optional)

Instructions:

  1. Cook ground turkey (if your need help cooking ground turkey so its not overcooked please comment me below)
  2. After draining the meat, add the taco seasoning to turkey and blend.
  3. After draining the black beans blend them in with the turkey and seasoning.
  4. While hot and nicely blended place in a medium size bowl and serve with your favorite chips.

Simple BBQ Protein Chicken Tenders

Ingredients 
  •  1 Unpasteurized Egg
  • 1-2 Bags of Quest BBQ Protein Chips (Can be purchased in some nutritional stores)
  • 1 Pound of Organic Chicken
  •  Coconut Spray
 Instructions

  1. Preheat oven for 350 degrees
  2. Scramble the egg in a small bowl
  3. Take a second bowl and place in the crushed chips 
  4. Spray a flat pan with coconut spray 
  5. Coat the chicken with egg then gently place chicken in the chips on each side.
  6. Place on pan and cook at 350 degrees for 20 minutes
